Once you start brewing, it makes a really, really good pot of coffee. Our taste test revealed the OXO On 12-Cup coffee was “dark and strong” and appealed to the more traditionalist coffee palates. The great flavor comes from the brewing process. The OXO machines have wide shower heads with multiple ports through which water streams, dispersing it evenly throughout the brew basket. Lots of other coffee makers spout water through just one hole, or through shower heads with a smaller radius, which can increase the chances of uneven extraction.
That water is heated in a detachable reservoir that doubles as a kettle. This is a unique feature for a coffee maker, but one we ended up appreciating, especially for households with a mix of tea lovers and instant-oatmeal eaters alongside coffee drinkers. Fill the kettle up, lock it in place, and scroll the dial to the amount of coffee you want brewed. The machine is designed so that, even if you have more water in the kettle than you need, it will brew only the amount you specify. The one thing you actually have to measure with the OXO On 12-Cup is the grounds. Do that right, and it’s pretty much impossible to screw it up.
The Baratza Encore is simplicity defined and our top coffee grinder. This burr grinder has a 40-setting grind size selector, an on-off switch for continuous grinding, and a push-button for manual control. That's it. Other grinders include complicated timers, built-in scales, strength adjustment sliders, and other doodads, but Baratza suggests that you don't need them—and they're right. Measure your beans using a separate scale, grind them fresh for each cup. That's the way to do it.
“I LOVE my Breville. I am a career barista. I have had this machine for almost a year now and waited to write a review until now so I wasn’t blinded by the initial excitement of purchasing a home espresso machine. I love to buy more expensive coffee from third-wave roasters, and this machine is so easy to dial in, I come away with professional shots almost every time. While this may be due to my experience in the shop, I will say that my husband is not a barista and picked up dialing in pretty fast using the Breville guides [that were] included. My only complaint is that the steaming wand is not the best. It takes a couple tries starting it up to get it going full blast some mornings, but I have always been able to achieve latte art. The impact of science and technological advances as a motif in post-war design was eventually felt in the manufacture and marketing of coffee and coffee-makers. Consumer guides emphasized the ability of the device to meet standards of temperature and brewing time, and the ratio of soluble elements between brew and grounds. The industrial chemist Peter Schlumbohm expressed the scientific motif most purely in his "Chemex" coffeemaker, which from its initial marketing in the early 1940s used the authority of science as a sales tool, describing the product as "the Chemist's way of making coffee", and discussing at length the quality of its product in the language of the laboratory: "the funnel of the CHEMEX creates ideal hydrostatic conditions for the unique... Chemex extraction." Schlumbohm's unique brewer, a single Pyrex vessel shaped to hold a proprietary filter cone, resembled nothing more than a piece of laboratory equipment, and surprisingly became popular for a time in the otherwise heavily automated, technology-obsessed 1950s household.
“What I REALLY like about it is that it’s pretty much an all-in-one system without the thousand-dollar-plus all-in-one cost. I push one button and all the magic happens, and it’s quite entertaining to watch the espresso cascade through the milk and create separate layers. I also like that I can take the milk and store it in my fridge. I’ve done some temperature tests, and only noticed a five-degree increase after making a double latte, before I put it back in the fridge. This is nice, as you would think that to be so close to all that heat, it would be a much bigger temperature fluctuation.”

When it comes to features, our top pick’s little sister, the OXO On 9-Cup Coffee Maker, looks and feels much the same: a single-button dial, programmable start times — even the timer that lets you know how old the coffee is after it’s been brewed is identical. On this version, the water reservoir isn’t detachable, but it brews coffee significantly faster than the 12-cupper’s 14 minutes(!) and it’s $100 cheaper. It’s a great machine that didn’t earn our top spot simply because the coffee it makes didn’t perform quite as well as the other three top picks in our taste tests, and it doesn’t let you tinker with water temperature and extraction the way the larger machine does.

An early variant technique, called a balance siphon, was to have the two chambers arranged side-by-side on a sort of scale-like device, with a counterweight attached opposite the initial (or heating) chamber. Once the near-boiling water was forced from the heating chamber into the brewing one, the counterweight was activated, causing a spring-loaded snuffer to come down over the flame, thus turning "off" the heat, and allowing the cooled water to return to the original chamber. In this way, a sort of primitive 'automatic' brewing method was achieved.
A cafetiere (Coffee Plunger, French press in US English) requires coffee of a coarser grind than does a drip brew coffee filter, as finer grounds will seep through the press filter and into the coffee. Coffee is brewed by placing the coffee and water together, stirring it and leaving to brew for a few minutes, then pressing the plunger to trap the coffee grounds at the bottom of the beaker.
The OXO is SCAA-certified, so we knew going in that it would heat water to the right temperature range and let coffee brew for the right amount of time. But what really sold us on the OXO was how its scrolling dial made even that customizable. Assuming you want to bring the extraction down a touch for lighter, subtler coffee, you can lower the water temperature with a twist of the dial. Likewise, if you want a slightly more robust aroma from your brew, you can increase the water’s temp the same way.
