The Baratza Encore is simplicity defined and our top coffee grinder. This burr grinder has a 40-setting grind size selector, an on-off switch for continuous grinding, and a push-button for manual control. That's it. Other grinders include complicated timers, built-in scales, strength adjustment sliders, and other doodads, but Baratza suggests that you don't need them—and they're right. Measure your beans using a separate scale, grind them fresh for each cup. That's the way to do it.
Because the coffee grounds remain in direct contact with the brewing water and the grounds are filtered from the water via a mesh instead of a paper filter, coffee brewed with the cafetiere captures more of the coffee's flavour and essential oils, which would become trapped in a traditional drip brew machine's paper filters.[3] As with drip-brewed coffee, cafetiere coffee can be brewed to any strength by adjusting the amount of ground coffee which is brewed. If the used grounds remain in the drink after brewing, French pressed coffee left to stand can become "bitter", though this is an effect that many users of cafetiere consider beneficial. For a 1⁄2-litre (0.11 imp gal; 0.13 US gal) cafetiere, the contents are considered spoiled, by some reports, after around 20 minutes.[4] Other approaches consider a brew period that may extend to hours as a method of superior production.

“This is simply an amazing machine. I have had NO trouble with it whatsoever. … The quality of the espresso is better than what I get out of the coffee shops — using their beans. It took me a long time to tune in the perfect cup of espresso/latte/cappuccino, and there are variables, but mostly in the beans you buy. I had to buy a decent burr grinder, but considering the investment in the machine, another $150 for a good burr grinder is nothing. I only run filtered water through the machine. I love this machine. Pierce's design was later improved by U.S. appliance engineers Ivar Jepson, Ludvik Koci, and Eric Bylund of Sunbeam in the late 1930s. All the machines we tested came with either insulated carafes or glass pots with built-in warmers. Both have pros and cons. Glass pots are typically easier to clean because they tend to have wider mouths, and the lack of internal insulation means that glass pots will have a greater interior volume relative to its exterior volume — basically, it’s easier to get your hand or dish sponge into a glass pot. On the other hand, glass pots are more fragile and have to be heated from a base plate. In our tests, those base plates could even raise the temperature of the coffee, like with the CuisinArt, which can make coffee taste burnt.
CR’s take: Like the model above, the Cuisinart Burr Grind & Brew takes whole coffee beans and grinds them fresh for each pot. It features programming, brew-strength control, a water filter, a permanent coffee filter, and auto-shutoff. This model earns a great rating for carafe handling. The stainless steel finish and glass carafe certainly elevate the experience of using it. Cuisinart brewers also received an Excellent rating for owner satisfaction. But the performance and finish come at a premium—this machine costs significantly more than the Black+Decker Mill & Brew.
